Gazpacho Salsa

Ingredients:
2 plum tomatoes, seeded and diced
1 small yellow bell pepper, diced
1 Kirby cucumber, diced
1/2 red onion, diced
1 tablespoon red wine vinegar
1 tablespoon extra virgin olive oil
1/4 teaspoon each Kosher salt and black pepper
dippers (crostini, veggies, pita chips)

Directions:
In a medium bowl combine tomatoes, bell pepper, cucumber, onion, vinegar, oil, and 1/4 teaspoon each of salt and pepper. Serve with the dippers.
